In partnership with the CU Denver Risk Management Insurance program\, we are excited to have Joshua Pollack\, CU Denver Jake Jabs Center for Entrepreneurship alum and founder/owner of Rosenberg’s Bagels and Delicatessen\, share his personal experiences with us over FREE lunch! \nPollack brought Rosenberg’s to life in July 2014\, and the deli has become a Denver staple ever since. Unfortunately\, the storefront burned down in May 2016 after an arsonist set fire to the building housing Rosenberg’s. Thanks to a good relationship and policy with his insurance agency early on\, Pollack was able to get the business back up and running in six months. After graduating from high school\, he took his love for food and family West\, to study at the University of Colorado Boulder. It’s there he met his wife\, Kara Pollack\, who helps him run the delicatessen. \nDrawing on his love of New York City’s classic food establishments such as Russ and Daughters\, Katz’s Deli\, and a few others\, Joshua decided to focus on what he loves most – New York bagels and lox! \nAfter months of construction and years of product development\, Joshua opened the doors of Rosenberg’s Delicatessen to the public on July 26\, 2014. Named after his mother and guardian angel\, Karen Rosenberg Pollack\, Rosenberg’s Deli is rooted in the two things Joshua is most passionate about – food and his family.

The beautifully and sustainably packaged teas are sold through natural\, specialty\, conventional and mass grocery as well as foodservice channels ranging from fine dining to college & university to fast casual. Linda is also the CEO & Co-Founder of the mama ‘hood (a resource for new & expecting moms & their families) & Teatulia Tea Bar (a fantastic little tea bar/coffee shop)\, in Devner’s LoHi neighborhood and in Boulder. \nPreviously\, Linda was Vice President with Orange Glo International\, where she launched OxiClean\, Kaboom\, Orange Glo and Orange Clean in the UK\, Europe and Asia until the business was sold to Church & Dwight in 2006. \nA native of Denver\, Linda went to Arapahoe High School then headed East to earn her bachelor’s degree from Columbia University in New York City and MBA in finance from New York University. She now lives in downtown Denver with her film maker husband Adan and her two children. In her spare time\, she hangs with her kiddos\, sees movies and does yoga\, runs or tortures herself with that Orange Theory thing.
